Lime Syllabub

INGREDIENTS (makes 12 portions)

For 4 to 6 persons:

  • Rind and juice of 6 limes
  • 180 ml dry White wine
  • 200g Castor Sugar
  • 600ml Double Cream
  • 2 Egg Whites

METHOD

Chill bowls or wine glasses to be used to serve the dessert in. Mix together Wine , Lime & 150 g of the sugar .Whisk egg whites untill stiff, using 50 g of the sugar. Whip Cream intill stiff, then add Lime wine and sugar mixture, fold egg whites ( gently ) into cream mix and place in pre chilled serving dishes or wine glasses and keep chilled till serving.
